SushiDog is opening at Bullring Birmingham in January 2026, bringing its famous customisable grab-and-go sushi to the Midlands for the very first time.

Founded in London, SushiDog is a QSR brand which has built strong brand recognition for its customisable, made-to-order SushiDogs, Sushi Bowls, and Sushi. Salads, using fresh ingredients and bold flavours. It bridges the gap between quick

service and healthy dining, with each dish prepared in front of customers for maximum freshness and personalisation.

The new 500 sq ft store, located on Bullring’s upper level, will feature seating for up to 25 diners and combine dine-in seating with a takeaway counter. The store will reflect SushiDog’s bright, playful brand aesthetic and focus on convenience, appealing to both city centre shoppers and office workers.

“We’re excited to bring SushiDog to Birmingham and introduce the concept to the city’s vibrant, creative community,” said Greg, co-founder of SushiDog.  “Bullring’s right at the heart of the city, always lively, full of energy, and packed with people who love fresh, fun food – and SushiDog feels like a perfect fit.”

The opening continues a period of growth for SushiDog, which has developed a loyal following in London with stores in Baker St, Bank, New Oxford St, Bishopsgate, London Bridge, Seven Dials, Soho, Strand, Warren St and Westfield.

Since launching in London, SushiDog has gained a loyal following for its fresh ingredients, customisation options, and Instagram-worthy presentation.

Paul O’Brien, Director of Leasing & Commercialisation at Hammerson, commented: “Bullring & Grand Central is in huge demand from the best F&B operators, and SushiDog’s first location outside of London perfectly reflects the appetite we see from operators seeking a landmark presence in the UK’s fastest growing city. SushiDog’s arrival will further enhance our unrivalled line-up of leading names in hospitality and leisure and reinforces Bullring & Grand Central’s status as a premier destination for dining and socialising.”

SushiDog will join Bullring’s diverse grab-and-go dining line-up and complement the destination’s vibrant entertainment offer.
