
Cornish Bakery, the independent, founder-driven company first started in Mevagissey, Cornwall, has confirmed the locations where it will open six new bakeries by May 2026. The ambitious expansion includes the company’s first ever bakery in Wales, its largest bakery to date and the launch of a significant new concept – ‘RISE by Cornish Bakery’, marking the next evolution of the high-growth business.
The new openings will be in Newbury and Lincoln in March, Betws-y-Coed (Wales), Gunwharf Quays (Portsmouth) and Wells in April and Witney in May. Even more will be announced soon. A significant total of £3.5million will be invested across the new locations, alongside a further £500,000 dedicated to refurbishing four existing bakeries in West Bay, Lyme Regis, Ambleside, and Bourton on the Water.
Each new bakery will feature a completely bespoke design philosophy, with unique colours, textures and architectural features, all carefully tailored to the building it occupies, the heritage of the surrounding place and its local community, all a hallmark of what Cornish Bakery brings to each new opening.
Betws-y-Coed, on the eastern edge of Snowdonia, marks the independent company’s first footprint in Wales – as well as the bakery being the largest ever property for Cornish Bakery. Despite its small size as a village, Betws-y-Coed is North Wales’ most popular inland resort and accommodation provider, fitting appropriately into Cornish Bakery’s tourism-strong location portfolio. The beautiful area is incredibly popular with ramblers, climbers and cyclists. Betws-y-Coed will also introduce Cornish Bakery’s significant new brand extension, ‘RISE by Cornish Bakery’.
As part of a recent shopping outlet redevelopment, Cornish Bakery is relocating to a new two storey property within Gunwharf Quays in Portsmouth. Additionally, this will be the second bakery to showcase the ‘RISE by Cornish Bakery’ concept. The new property will feature a large orangery and outdoor terrace. The Cornish Bakery takeaway kiosk in the centre of Gunwharf Quays will continue to operate alongside the large new bakery.
‘RISE by Cornish Bakery’ represents an evolution in both product and service experience. These licensed bakeries will expand traditional coffee and bakery offerings to include additional small plates designed for brunch, lunch and early evening dining. Guests will be able to enjoy Cornish beers from Harbour Brewery and wines from Camel Valley Vineyard alongside the enhanced menu. The ‘RISE by Cornish Bakery’ locations will also feature larger, more immersive spaces, including bakeries spanning up to 3,500 square feet, venues accommodating up to 196 covers, and one site extending across three floors with regularly changing curated art exhibitions.
